Are you feeling lazy to cook a recipe that takes too long to cook? Or, are you in need of a warm, tasty and light soup to nourish your body before you head to bed? This tomato and mushroom soup recipe is a great find.
Mushrooms (100 grams)
Tomatoes - big stake tomatoes or wine tomatoes (500 grams)
Garlic Cloves - 2 big ones
Ginger - just a small slice (optional)
Onion - yellow (one)
Salt to taste
Black Pepper to taste
Soya Sauce (1 Tablespoon)
Hoisin Sauce (1 Teaspoon)
Sesame Oil (few drops)
Take a pan and add few cups of water and bring it to boil. Add the boiled ones into chilled water and take the skins off - make sure you take caution as tomatoes will be very HOT!
Now start chopping. Cut the tomatoes in small pieces. Cut onions, garlic and ginger.
Add one teaspoon olive oil to the pan. Add cut mushrooms along with a pinch of salt. Let the mushrooms heat up so that their water is evaporated.
2. Add onions, garlic and ginger and let it simmer for a couple of minutes. Finally add tomatoes. Once the tomatoes start simmering hot, add 2 cups of water. Let the water come to a boil and then bring the heat down to medium. Allow to slow cook for 15 minutes.
Finally add salt and pepper to taste. Tip! Garnish with chopped coriander leaves or parsley. Enjoy!!
